Not sure what to do with those over ripe bananas….Well this is a great cookie recipe to make. Very moist and only takes a few minutes to prepare and bake.
Banana Raisin Cookies
Easy to make recipes • ½ cup of unsalted butter, softened • 1 cup sugar • 1 egg • 1 cup of bananas, mashed • 1 teaspoon baking soda • 2 cups all purpose flour • Pinch of salt • 1 teaspoon ground cinnamon • 1 teaspoon ground nutmeg • ½ teaspoon ground cloves • 1 cup raisins
Preheat oven to 350 degrees. Cream the butter and sugar together. Add egg and beat until fluffy. In small bowl, mix the mashed bananas and baking soda. Set aside for 2 minutes. Combine banana mixture and butter mixture. Add flour, salt and all spices into banana butter mixture. Mix until just combined. Fold raisins into batter. Using teaspoon, drop batter onto ungreased cookie sheet. Bake for 11-13 minutes or until golden brown. Cool on wire racks.
Can’t get enough of these cookies. They are loaded with blueberry goodness. I just had to post another picture of these sweeties! 🙂
Loaded Blueberry-Lemon Cookies

cookies 2 sticks butter, softened 8 ounces cream cheese, softened, divided 1 cup sugar 2 eggs 1 lemon, zest and lemon juice 2 teaspoon vanilla, divided 2 ½ cups all-purpose flour ½ teaspoon salt ½ teaspoon baking powder 2 cups fresh blueberries ½ cup powdered sugar 2 tablespoons milk
In large bowl, beat butter, and only 4 ounces of cream cheese together. Beat until smooth. Add sugar, eggs, zest of 1 lemon and lemon juice of 1 lemon. Add 1 teaspoon vanilla. Beat until smooth. Combine flour, salt, and baking powder. Add to butter mixture. Beat until combined. Fold in fresh blueberries. Chill for 15 minutes. Preheat oven to 350 degrees. Drop dough by heaping teaspoons onto ungreased cookie sheet. Cook 17 to 20 minutes or until golden brown on bottom. Cool cookies on cookie rack. Icing: In medium bowl, combine remaining 4 ounces of cream cheese, 1 teaspoon vanilla, powdered sugar, and milk together. Beat until smooth. Top each cooled cookie with ¼ teaspoon of icing.

Chewy Cranberry-Raisin Cookies

cookies 2 sticks or 1 cup of butter, unsalted, softened 1 cup brown sugar ¼ cup sugar 1 egg 1 teaspoon vanilla extract 2 cups all-purpose flour ½ tsp. baking powder ½ tsp. salt 1 tsp. baking soda 1 cup sweetened dried cranberries 1 cup raisins 1 ¼ cup quick cooking oats
Preheat oven to 375 degrees F. In large bowl using electric mixer beat butter, brown sugar, sugar, egg and vanilla. Beat until smooth. In medium bowl combine flour, baking powder, salt, and baking soda together. Add to butter mixture. Mix until blended. Stir in cranberries, raisins, and oats. Spoon cookie dough by heaping teaspoons on baking sheet. Bake for 8 to 11 minutes or until lightly browned. Let stand on baking sheet for 2 minutes before transferring to wire racks to cool completely.
