Ingredients
  • Crust and Topping
  • 1 ½ cups all purpose flour
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 ½ stick butter, unsalted, cold, sliced thinly
  • Blueberry Filling
  • 2 eggs
  • ⅓ cup all purpose flour
  • 1 cup sugar
  • 8 ounces sour cream
  • Pinch of salt
  • ½ teaspoon vanilla extract
  • 3 cups blueberries, fresh or thawed frozen blueberries
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray 9x13 glass baking dish with non-stick cooking spray. Set aside.
  3. In mixing bowl, combine flour, sugar, salt, butter and beat until crumbly. (You can use a fork also to press the butter into flour mixture.)
  4. Remove 1 cup of flour mixture and set aside. This will go on top of blueberry filling later.
  5. Press remaining flour mixture into baking dish making a crust. Cover only the bottom. Bake for 15 minutes.
  6. In large bowl, slightly beat eggs. Add flour, sugar, sour cream, salt and vanilla. Beat on low with electric mixture until blended.
  7. Fold in blueberries. Pour blueberry mixture over cooked crust. Now topped with 1 cup of flour mixture you had set aside earlier.
  8. Bake for 1 hour or until top is golden brown.

Slightly Sweet Blueberry

These are so easy to make and not real sweet.  Can be made with using fresh or frozen blueberries. Enjoy!

Ingredients
  • 1 ½ cups all purpose flour
  • ½ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup milk
  • ¼ cup canola or vegetable oil
  • 1 egg, slightly beaten
  • 1 cup fresh or frozen blueberries, thawed
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine all dry ingredients.
  3. In a medium bowl, combine, milk, oil and egg.
  4. Add egg mixture to dry ingredients. Stir just until moistened.
  5. Gently fold blueberries into batter.
  6. Spoon into greased muffins pans filling two thirds full.
  7. Bake for 20 to 25 minutes.

Loaded Blueberry-Lemon Cookies

Ingredients
  • 2 sticks butter, softened
  • 8 ounces cream cheese, softened, divided
  • 1 cup sugar
  • 2 eggs
  • 1 lemon, zest and lemon juice
  • 2 teaspoon vanilla, divided
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 2 cups fresh blueberries
  • ½ cup powdered sugar
  • 2 tablespoons milk
Instructions
  1. In large bowl, beat butter, and only 4 ounces of cream cheese together. Beat until smooth. Add sugar, eggs, zest of 1 lemon and lemon juice of 1 lemon. Add 1 teaspoon vanilla. Beat until smooth.
  2. Combine flour, salt, and baking powder. Add to butter mixture. Beat until combined. Fold in fresh blueberries. Chill for 15 minutes.
  3. Preheat oven to 350 degrees. Drop dough by heaping teaspoons onto ungreased cookie sheet.
  4. Cook 17 to 20 minutes or until golden brown on bottom. Cool cookies on cookie rack.
  5. Icing: In medium bowl, combine remaining 4 ounces of cream cheese, 1 teaspoon vanilla, powdered sugar, and milk together. Beat until smooth. Top each cooled cookie with ¼ teaspoon of icing.
