Blueberry Muffins – Slightly Sweet

Slightly Sweet Blueberry

These are so easy to make and not real sweet.  Can be made with using fresh or frozen blueberries. Enjoy!

Serves: 12
  • 1 ½ cups all purpose flour
  • ½ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup milk
  • ¼ cup canola or vegetable oil
  • 1 egg, slightly beaten
  • 1 cup fresh or frozen blueberries, thawed
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine all dry ingredients.
  3. In a medium bowl, combine, milk, oil and egg.
  4. Add egg mixture to dry ingredients. Stir just until moistened.
  5. Gently fold blueberries into batter.
  6. Spoon into greased muffins pans filling two thirds full.
  7. Bake for 20 to 25 minutes.
