A Warm and Hearty Soup for a cold winter’s day.  Made with Lean hamburger meat with lots of pepperoni.

Italian Beef and Pepperoni Soup

Ingredients
  • 1 pound lean ground beef
  • 1 (6 ounce) stick of pepperoni , sliced. (2 cups)
  • 1 teaspoon olive oil
  • 1 red bell pepper, seeded, chopped
  • 1 green bell pepper, seeded, chopped
  • 1 medium white onion, chopped
  • 2 garlic cloves, minced
  • 4 tablespoons ketchup
  • 1 (10- ounce) can Rotel
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 2 cans cream of chicken
  • 5 cups water
  • ½ tablespoon Italian Seasoning
  • ½ teaspoon dried Oregano
  • ½ teaspoon dried Basil
  • ½ cup of fresh Parmesan Cheese topping (optional)
Instructions
  1. Cook ground beef in saucepan over medium heat until beef crumbles and is lightly brown.
  2. In large soup pot add olive oil, red pepper, green pepper, onions, garlic and saute’ for about 5 minutes. Add sliced pepperoni along with ground beef.
  3. Add the rest of the ingredients and bring to a boil. Reduce heat and simmer for 30 minutes.
  4. Garnish with fresh Parmesan Cheese

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3 teaspoon baking powder
  • 2 sticks butter, melted
  • 1 cup sour cream
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together. Stir until completely combined.
  3. Cook in ungreased miniature muffin pan for 20 to 30 minutes or until lightly brown.

Ingredients
  • ½ cup butter, unsalted
  • 1 white onion, chopped
  • 1 (16-ounce) sour cream
  • 1 (10.5) can cream of celery soup
  • 1 (8-ounce) pkg. shredded cheddar cheese
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 (30-ounce) package frozen shredded hash brown potatoes, thawed
  • 2 ½ cups crushed potato chips
Instructions
  1. Preheat oven to 350 degrees. Grease a 13 x 9 baking dish. Set aside.
  2. In a small saucepan, melt butter. Stir in onions and cook for 4 minutes. Pour mixture into a large bowl.
  3. Add to onion mixture the sour cream, celery soup, cheese, salt and pepper. Mix well.
  4. Stir in thawed hash browns. .
  5. Pour hash brown mixture into baking dish. Top with crushed potato chips.
  6. Bake 45 minutes or until bubbly.
