This recipe makes a big tray full of yummy cookies.

These soft and chewy cookies have a light lemon buttery flavor.  My mother-in-law only had one word to describe these cookies.  Outstanding!

Ingredients
  • 2 sticks butter, softened, unsalted
  • ½ cup brown sugar
  • 1 ½ cup sugar
  • 2 eggs
  • Lemon zest of 1 lemon
  • Lemon juice of 1 lemon
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon cream of tarter
Instructions
  1. Preheat oven to 350 degrees. In large bowl, beat butter and sugars together until creamy. Beat in eggs. Add lemon zest and lemon juice. Beat until smooth.
  2. Add flour, baking soda, salt and cream of tartar. Beat into creamed mixture until combined.
  3. Shape into 1 inch balls. Place 4 inches apart on baking sheet. Flatten balls slightly with bottom of a glass or cup.
  4. Bake 12 to 14 minutes or until light brown around edges. Remove and cool on wire racks.

Ingredients
  • 1 ½ cups graham crackers crumbs, finely ground
  • ⅓ cup sugar
  • 1 stick of butter, melted
  • 1 package (8 ounce) cream cheese, softened
  • 1 cup milk
  • 1 box (4 serving size) lemon instant pudding and pie filling mix
  • 1 cup lemon pie filling (from 22 ounce can)
  • 2 tablespoons lemon zest
  • 3 tablespoons of fresh lemon juice
  • 1 (8 ounce) container of cool whip, thawed
Instructions
  1. Preheat oven to 375 degrees. In a medium bowl combine the graham crackers, sugar and butter. Stir until coated.
  2. Press cracker mixture into a 9 inch pie plate. Bake for 7 minutes. Cool.
  3. In a medium bowl, cream cheese for about 30 seconds with electric mixer. Add milk, pudding mix and beat about 1 minute or until smooth. Add pie filling, lemon zest, and lemon juice. Beat until blended. Fold in cool whip.
  4. Spoon lemon pudding mixture into cooled graham crust. Freeze for at least 2 hours.
  5. Remove frozen pie from freezer 30 to 45 minutes prior to serving.

Ingredients
  • 2 ¼ cup all-purpose flour, divided
  • ½ cup confectioners’ sugar
  • 1 cup butter, melted, unsalted
  • 2 (8-ounce) pkg. cream cheese, softened
  • 2 ¼ cups sugar, divided
  • ½ cup milk
  • 2 teaspoon lemon extract
  • 4 eggs
  • ⅓ cup fresh lemon juice
  • 2 teaspoons lemon zest
  • ½ teaspoon baking powder
  • Garnish: Confectioners’ Sugar
Instructions
  1. Preheat oven to 350 F. Lightly grease 13x9 baking dish. Set aside.
  2. In medium bowl, combine 2 cups flour and confectioners’ sugar. Add melted butter and mix until blended.
  3. Press mixture evenly into bottom of baking dish. Bake for 15 minutes.
  4. Meanwhile, in medium bowl combine cream cheese and ½ cup of sugar. Beat with electric mixer until smooth. Add milk and lemon extract. Beat until combined. Pour over crust. Bake for another 15 minutes. Remove from oven and let cool for 10 minutes.
  5. In medium bowl, mix together 1 ¾ cups sugar, eggs, lemon juice, and lemon zest. Add ¼ cup flour and baking powder. Stir until combined.
  6. Pour over cream cheese mixture. Bake for 40 minutes or until tester in center comes out sticky.
  7. Cut into squares and garnish with confectioners’ sugar.

Caramel Stuffed Cookie Recipe

Ingredients
  • 2 sticks unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • ¼ teaspoon salt
  • 2⅔ cups all-purpose flour
  • 2 teaspoon vanilla extract
  • 36 pieces of caramel candy
Instructions
  1. In bowl, cream sugar and softened butter together. Stir in egg and vanilla. Combine flour and salt; add flour to the sugar mixture and mix until well blended. Chill dough and cookie sheets for 1 hour.
  2. Preheat oven 400 degrees. Make 1 inch dough balls. Press 1 caramel square into center of each ball. Make sure caramel is completely covered with dough on all sides. On chilled cookie sheets gently press dough down to form cookie.
  3. Bake 8 to 11 minutes or until lightly brown around the edges.
