Cheddar cheese muffins using one granny smith apple.  This muffin is yummy good!  Not too sweet….Surprise your family with this jewel of a muffin.

Ingredients
  • 1 Tablespoon butter
  • 1 Granny Smith apple, peeled and chopped
  • ½ cup chopped onion
  • 1 tablespoon sugar
  • 2⅓ all-purpose baking mix
  • 1 ½ cup extra sharp cheddar cheese, shredded
  • ¼ cup plain yellow cornmeal
  • ¼ teaspoon salt
  • ¾ cup milk
  • 2 eggs

Instructions
  1. Preheat oven to 425 degrees F. Spray 12 cup muffin pan with non-stick spray. Set aside.
  2. Melt butter in a small skillet along with apple, onion and sugar. Cook for 6 minutes.
  3. In large bowl, combine baking mix, cheese, cornmeal and salt. Make a well in center of mixture.
  4. Whisk eggs and milk; add to dry mixture. Stir until moistened. Stir apple mixture into batter.
  5. Spoon batter into muffin pan, filling cups ⅔ full.
  6. Bake for 12 to 14 minutes or until golden brown.
  7. Let cool in pan for 5 minutes. Gently run a knife around edges of muffins to remove.

Ingredients
  • ⅓ cup butter or margarine, melted
  • ½ cup sugar
  • 1 egg
  • 1 ½ cup of all purpose flour
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon ground nutmeg
  • ½ cup milk
  • ¼ cup sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons melted butter or margarine

Instructions
  1. Preheat oven 350 degrees.
  2. Beat ⅓ cup of melted butter, ½ cup sugar, and egg with a mixer until creamy.
  3. Combine flour, salt, baking powder and nutmeg and add to butter mixture along with ½ cup of milk. Beat at low speed until blended.
  4. Spoon into greased miniature muffin pans and fill around ⅔ full.
  5. Cook for 12 to 14 minutes. Remove from pan while still hot.
  6. Topping: Combine ¼ cup sugar and 1 tsp. of cinnamon in bowl. Dip tops of muffins in 4 tablespoons of melted butter and then in sugar mixture.
