Ingredients
  • Crust and Topping
  • 1 ½ cups all purpose flour
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 ½ stick butter, unsalted, cold, sliced thinly
  • Blueberry Filling
  • 2 eggs
  • ⅓ cup all purpose flour
  • 1 cup sugar
  • 8 ounces sour cream
  • Pinch of salt
  • ½ teaspoon vanilla extract
  • 3 cups blueberries, fresh or thawed frozen blueberries
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray 9x13 glass baking dish with non-stick cooking spray. Set aside.
  3. In mixing bowl, combine flour, sugar, salt, butter and beat until crumbly. (You can use a fork also to press the butter into flour mixture.)
  4. Remove 1 cup of flour mixture and set aside. This will go on top of blueberry filling later.
  5. Press remaining flour mixture into baking dish making a crust. Cover only the bottom. Bake for 15 minutes.
  6. In large bowl, slightly beat eggs. Add flour, sugar, sour cream, salt and vanilla. Beat on low with electric mixture until blended.
  7. Fold in blueberries. Pour blueberry mixture over cooked crust. Now topped with 1 cup of flour mixture you had set aside earlier.
  8. Bake for 1 hour or until top is golden brown.

Love These!!!!  Great for breakfast, brunch or just a dessert.  Taste pretty close to cinnamon toast filled with blueberries flavor cream cheese.  These are lovely on a serving tray.  🙂


Blueberry Cream Cheese Mini Roll Ups

Ingredients
  • ½ cup blueberries, fresh or frozen thawed
  • 1 loaf white bread
  • 8 ounces cream cheese, room temperature
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla
  • 1 cup sugar
  • 3 teaspoon cinnamon
  • 1 cup butter, melted
Instructions
  1. Preheat oven to 350 degrees.
  2. In medium bowl combine cream cheese, powdered sugar and vanilla. Beat until smooth. Fold in blueberries.
  3. In small bowl, combine sugar and cinnamon. Set aside.
  4. In small bowl, melt butter. Set aside.
  5. Spread 1 tablespoon of blueberry mixture on each slice of bread.
  6. Roll up bread. Using a bread knife cut each roll in half.
  7. Dip each roll into melted butter, and roll in cinnamon sugar.
  8. Place each mini roll onto ungreased baking sheet, seam side down.
  9. Bake for 15to 20 minutes or until golden brown.
