Chocolate Covered Cherry Cookie Recipe

Ingredients
  • ½ cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 ½ teaspoons vanilla
  • 1½ cups all-purpose flour
  • ½ cup cocoa
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 48 maraschino cherries, drained, reserve juice
  • Frosting:
  • 8 ounces semi-sweet chocolate baking bar
  • ½ cup sweetened condensed milk
  • ¼ teaspoon salt
  • 2 teaspoons reserved cherry juice
Instructions
  1. Preheat oven to 350 degrees.
  2. Using electric mixer blend butter, sugar, egg and vanilla. Add flour, cocoa, salt, and baking soda to butter mixture. Blend. Dough will be thick. Shape into 1 inch balls. Place on cookie sheet 2 inches apart.
  3. Push 1 whole cherry into center of each ball. Set aside and make frosting.
  4. In microwave melt chocolate for 1 minute. If not completely melted microwave another 20 seconds. Add condensed milk to melted chocolate and stir until smooth. Add salt and cherry juice and stir until blended.
  5. Spread ½ teaspoon of frosting on each cookie covering the cherry.
  6. Bake 8 to 10 minutes.

These will remind you of chocolate covered cherries. :)
Serves: 10-12
Ingredients
  • 1 (3.4 ounce) box Vanilla Instant Pudding and Pie Filling
  • 1 ¾ cups of Milk
  • 15 Maraschino Cherries, cut in half
  • 4 to 8 ounces of semi-sweet Chocolate Baking Bar
  • 1 teaspoon of Shortening
  • 10 to 12 popsicle or lollipop sticks
Instructions
  1. Combine pudding and milk. Whisk together until smooth.
  2. Stir in cherries.
  3. Pour pudding mixture into Mini Cups or 2 oz. paper cups. Insert stick in center of each.
  4. Freeze for several hours.To remove from plastic cups, run hot water around sides for 1 to 3 seconds.
  5. In small bowl, melt chocolate and shortening for 1 minute in microwave. Stir until smooth.
  6. Working quickly, drizzle chocolate over top of each frozen cherry pop using a teaspoon.
  7. Keep pops in freezer until ready to enjoy.
