Ingredients
- ½ cup butter, softened
- 1 cup sugar
- 1 egg
- 1 ½ teaspoons vanilla
- 1½ cups all-purpose flour
- ½ cup cocoa
- ¼ teaspoon salt
- ¼ teaspoon baking soda
- 48 maraschino cherries, drained, reserve juice
- Frosting:
- 8 ounces semi-sweet chocolate baking bar
- ½ cup sweetened condensed milk
- ¼ teaspoon salt
- 2 teaspoons reserved cherry juice
Instructions
- Preheat oven to 350 degrees.
- Using electric mixer blend butter, sugar, egg and vanilla. Add flour, cocoa, salt, and baking soda to butter mixture. Blend. Dough will be thick. Shape into 1 inch balls. Place on cookie sheet 2 inches apart.
- Push 1 whole cherry into center of each ball. Set aside and make frosting.
- In microwave melt chocolate for 1 minute. If not completely melted microwave another 20 seconds. Add condensed milk to melted chocolate and stir until smooth. Add salt and cherry juice and stir until blended.
- Spread ½ teaspoon of frosting on each cookie covering the cherry.
- Bake 8 to 10 minutes.
