These yummy biscuits are just sweet enough to satisfy your sweet tooth!  They are loaded with raisins and cinnamon, then topped off with a butter icing…


Cinnamon-Raisin Biscuits

Ingredients
  • ½ cup butter, cold, sliced thin
  • 2¼ cups all-purpose flour
  • 1 ¼ cups buttermilk
  • 2 ½ teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup raisins
  • Icing:
  • ½ cup powdered sugar
  • 2 tablespoons butter, melted
Instructions
  1. Preheat oven to 450 degrees.
  2. In large bowl, combine flour, baking powder, cinnamon and salt. Add sliced butter. Cut butter into flour using a pastry blender or fork until crumbly. Should look like small peas. Slightly toss in raisins. Cover and chill for 10 minutes. Add buttermilk. Stir until moistened.
  3. On a lightly floured surface, knead 4 times, gradually adding flour as needed. With floured hands, pat dough into a ¾ inch thick rectangle (9 x 5 inches). Fold dough over onto itself in 3 sections, starting with 1 short end. Repeat process 2 more times.
  4. Press dough to ½ inch thickness and cut with a 2 inch biscuit cutter. Place biscuits on a lightly greased cookie sheet. Make sure each biscuit touch each other.
  5. Bake for 13 to 15 minutes or until lightly browned.
  6. Combine powdered sugar and 2 tablespoons melted butter together. Dizzle over warm biscuits.
  7. Makes about 2 dozen cinnamon raisins biscuits.

Ingredients
  • 1 large granny smith apple, peeled, cored, chopped into small pieces
  • 1 loaf sliced bread
  • 8 ounces cream cheese, softened
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla
  • 1 cup sugar
  • 3 teaspoon cinnamon
  • ¾ cup butter, melted
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl combine cream cheese, powdered sugar and vanilla. Beat until combined. Fold in apple pieces.
  3. In small bowl, combine sugar and cinnamon. Set aside.
  4. In small bowl melt butter.
  5. Spread 1 tablespoon of cheese mixture on each slice of bread.
  6. Roll up. Cut in half.
  7. Dip into melted butter. Then roll in cinnamon sugar.
  8. Place each mini roll onto ungreased baking sheet, seam side down.
  9. Bake for 15 to 20 minutes or until golden.

Ingredients
  • 2 tablespoons Shortening
  • 4 Eggs
  • 2 cups milk
  • 3 tablespoons Canola or Vegetable oil
  • 2 cups All- Purpose flour
  • ½ teaspoon Salt
  • 1 cup Butter, softened
  • 4 tablespoons Confectioners’ Sugar
  • 3 tablespoons Raspberry Preserves
Instructions
  1. Preheat oven to 400 F. Using shortening, grease the bottom and sides of popover pan. Place empty pan in oven to heat.
  2. In a medium size bowl, whisk together eggs, milk and oil. Add flour and salt. Whisk together until batter is smooth.
  3. Remove pan from oven, and fill popover cups ¾ full of batter. Return pan to oven, and bake for 35 to 40 minutes or until light golden brown.
  4. Remove from oven and prick the tops of popovers with a fork to let steam escape.
  5. To make Raspberry Butter, in a medium bowl, combine butter, confectioners’ sugar and raspberry preserves. Using electric mixer beat until creamy. Serve butter on top of warm popover.

Ingredients
  • 1 (30-ounce) package frozen Hash Brown Potatoes, thawed
  • ½ cup Butter, melted
  • 1 lb. package of Bacon, cooked and crumbled
  • 1 cup Cheddar Cheese, grated
  • 1 cup Mozzarella Cheese, grated
  • 10 Eggs
  • 1 ½ cup of Milk
  • ½ teaspoon of Salt
  • ½ teaspoon of Pepper
Instructions
  1. Preheat oven to 425 degrees. Lightly grease 9 x 13 inch baking dish.
  2. Press potatoes into bottom and up sides of baking dish to form crust. Pour melted butter over crust. Bake for 30 minutes or until lightly brown.
  3. Remove from oven and reduce to 350 degrees.
  4. Sprinkle bacon, and both cheeses over potatoes.
  5. In a medium bowl, whisk together eggs, milk, salt and pepper. Pour over bacon and cheeses.
  6. Bake for 30 minutes or until set and puffed.
