Was not sure what to call this delicious apple recipe.  So I came up with this.  Apple Pie Cobbler Cake.  It’s a little like an apple pie, but it looks like a cobbler and it has cake mix in it.  Anyway it GOOD!

Ingredients
  • 2 (20 ounce) cans apple pie filling
  • 1 (15.25 ounce) box of yellow cake mix
  • 1 cup or 2 sticks on butter, room temperature
  • ¾ cups of oats, quick or old fashioned, uncooked
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ½ cup of milk
Instructions
  1. Preheat oven to 375 degrees. In large sauce pan heat apple filling over low to medium heat until hot.
  2. In a large bowl combine yellow cake mix and butter together using electric mixer on low until crumbly.
  3. Set aside 1 ½ cups of cake butter mixture in a smaller bowl. Stir in brown sugar, cinnamon and oats.
  4. In large bowl stir milk into cake butter mixture. Stir until moistened.
  5. In 13 x 9 baking dish, spoon hot apple pie filling; covering the bottom of dish.
  6. Top with spoonfuls of cake batter. Then sprinkle with oatmeal cinnamon mixture.
  7. Cook for 30 to 45 minutes or until top is light golden brown.

apple raisin salsa and cinnamon chips

Salsa taste just like fresh apple pie filling.  Extra little treat is the homemade cinnamon tortilla chips that you use to dip into that wonderful apple salsa.  Make it extra special by adding whipped cream.  Double YUM!  🙂

Ingredients
  • Cinnamon Chips Ingredients:
  • 4 flour tortillas
  • Butter, softened
  • Cinnamon sugar
  • Apple Raisin Salsa Ingredients:
  • 4 Granny Smith apples, peeled, diced
  • 1 tsp. lemon juice
  • 1 cup brown sugar
  • 2 tablespoon butter
  • 1 teaspoon cinnamon
  • 1 tablespoon corn starch
  • ½ cup raisins
Instructions
  1. Directions for Apple Raisin Salsa:
  2. In large sauce pan, combine apples, lemon juice, sugar, butter, cinnamon and cornstarch.
  3. Cook on medium heat for 20 minutes. Stir occasionally.
  4. Remove from heat and fold in raisins.
  5. Optional: Serve with whipped cream.
  6. Directions for Chips:
  7. Preheat oven to 350 degrees.
  8. Butter one side of tortillas, then sprinkle with cinnamon sugar. Cut into wedges.
  9. Place on a cookie sheet buttered side up. Bake 7 to 9 minutes or until lightly browned.

Apple Fritter Bites

Warning….you can’t eat just one!  These little treats are just right for a quick apple snack.  Fast and easy to make using Granny Smith Apples….Eat them while they are still warm….Delicious!

Apple Fritter Bites Recipe

Ingredients
  • 1 egg
  • ⅔ cup milk
  • 1 teaspoon canola oil or vegetable oil
  • 1 cup all purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • Pinch of salt
  • Topping Cinnamon Sugar – ¼ cup white sugar and 1 teaspoon cinnamon combined.
  • 4 or 5 large Granny Smith Apples, peeled, cored and cut into ½ inch cubes
  • 2 cups of canola or vegetable oil for frying
Instructions
  1. In a medium size bowl, beat egg, milk and oil together. Add flour, sugar, baking powder and salt to egg mixture. Stir until smooth.
  2. In deep fryer heat 2 cups of oil until 375 degrees. Dip apple chunks into batter and then into hot oil. Fry until golden brown. Drain on paper towels. While still hot, sprinkle cinnamon sugar over fritter bites.
