  • 2 ½ cups all-purpose flour
  • 1 ½ cup shredded coconut
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ baking soda
  • ½ teaspoon salt
  • 1¼ cups milk
  • ⅓ cup vegetable or canola oil
  • 1 egg
  • 2 tablespoons plus 5 teaspoons lime juice, divided
  • 1 teaspoon lime zest
  • 1 cup confectioners’ sugar
  1. Preheat oven to 400 degrees F. Spray mini muffin pan with non-stick cooking spray.
  2. In a medium bowl, combine flour, coconut, sugar, baking powder, baking soda, and salt.
  3. In a small bowl, combine milk, oil, egg, 2 tablespoons lime juice and lime zest. Add mixture to flour mixture. Stir until moistened.
  4. Spoon into prepared muffin pan. Fill each cup ¾ full.
  5. Bake 10 minutes or until edges are light brown.
  6. In small bowl, combine confectioners’ sugar and remaining 5 teaspoons of lime juice. Drizzle over hot muffins.
