Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3 teaspoon baking powder
  • 2 sticks butter, melted
  • 1 cup sour cream
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together. Stir until completely combined.
  3. Cook in ungreased miniature muffin pan for 20 to 30 minutes or until lightly brown.

Ingredients
  • 1¾ cup all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons sugar
  • 10 strips of bacon, cooked and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 1 egg, lightly beaten
  • ¾ cup milk
  • ⅓ cup vegetable or canola oil
  • 3 tablespoons butter, melted
Instructions
  1. Preheat oven to 400 degrees. Spray 12 cup muffin pan with non-stick cooking spray.
  2. In a large bowl combine flour, baking powder, salt, and sugar. Add bacon and cheese to flour mixture. Stir.
  3. In a small bowl combine egg, milk, and oil. Add to dry ingredients, stirring just until moistened.
  4. Spoon batter into prepared muffin pan, filling two-thirds full.
  5. Bake for 17 to 20 minutes or until golden brown. Remove from pans immediately.
  6. Brush tops with butter.

Ingredients
  • 2 ½ cups all-purpose flour
  • 1 ½ cup shredded coconut
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • ½ baking soda
  • ½ teaspoon salt
  • 1¼ cups milk
  • ⅓ cup vegetable or canola oil
  • 1 egg
  • 2 tablespoons plus 5 teaspoons lime juice, divided
  • 1 teaspoon lime zest
  • 1 cup confectioners’ sugar
Instructions
  1. Preheat oven to 400 degrees F. Spray mini muffin pan with non-stick cooking spray.
  2. In a medium bowl, combine flour, coconut, sugar, baking powder, baking soda, and salt.
  3. In a small bowl, combine milk, oil, egg, 2 tablespoons lime juice and lime zest. Add mixture to flour mixture. Stir until moistened.
  4. Spoon into prepared muffin pan. Fill each cup ¾ full.
  5. Bake 10 minutes or until edges are light brown.
  6. In small bowl, combine confectioners’ sugar and remaining 5 teaspoons of lime juice. Drizzle over hot muffins.

Ingredients
  • 1 box yellow cake mix with pudding
  • 4 eggs
  • ¾ cup of canola or vegetable oil
  • 1 box 3.4 oz. instant lemon pudding
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray miniature muffin pan with non-stick spray.
  3. Mix all the above ingredients in a large bowl on low speed until blended.
  4. Drop in heaping teaspoon of batter in each muffin cup.
  5. Cook for 12 minutes.
  6. Note: Use butter knife around rim of each muffin to remove from muffin pan.
