Oh are these GOOD!  Don’t throw away those over ripe bananas.   Use them to make these wonderful muffins.

Ingredients
  • 1 ¾ cups all purpose flour
  • ½ teaspoon salt
  • ¾ teaspoon baking soda
  • ¾ cup sugar
  • 1 ¼ teaspoons cream of tarter
  • ½ cup canola or vegetable oil
  • 2 eggs, slightly beaten
  • 3 medium size ripe bananas, mashed
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine all dry ingredients together.
  3. In medium bowl, combine oil, eggs and bananas.
  4. Add egg mixture to dry ingredients, stirring until moistened.
  5. Spoon batter into greased muffin pans, filling three-fourths full.
  6. Bake for 15 to 18 minutes or until golden brown.

Blueberry Muffins – Slightly Sweet

Slightly Sweet Blueberry

These are so easy to make and not real sweet.  Can be made with using fresh or frozen blueberries. Enjoy!

Ingredients
  • 1 ½ cups all purpose flour
  • ½ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup milk
  • ¼ cup canola or vegetable oil
  • 1 egg, slightly beaten
  • 1 cup fresh or frozen blueberries, thawed
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl, combine all dry ingredients.
  3. In a medium bowl, combine, milk, oil and egg.
  4. Add egg mixture to dry ingredients. Stir just until moistened.
  5. Gently fold blueberries into batter.
  6. Spoon into greased muffins pans filling two thirds full.
  7. Bake for 20 to 25 minutes.

Apple Cheddar Muffins

Cheddar cheese muffins using one granny smith apple.  This muffin is yummy good!  Not too sweet….Surprise your family with this jewel of a muffin.

Makes around 20 muffins.

Ingredients
  • 1 Tablespoon butter
  • 1 Granny Smith apple, peeled and chopped
  • ½ cup chopped onion
  • 1 tablespoon sugar
  • 2⅓ all-purpose baking mix
  • 1 ½ cup extra sharp cheddar cheese, shredded
  • ¼ cup plain yellow cornmeal
  • ¼ teaspoon salt
  • ¾ cup milk
  • 2 eggs
Instructions
  1. Preheat oven to 425 degrees F. Spray 12 cup muffin pan with non-stick spray. Set aside.
  2. Melt butter in a small skillet along with apple, onion and sugar. Cook for 6 minutes.
  3. In large bowl, combine baking mix, cheese, cornmeal and salt. Make a well in center of mixture.
  4. Whisk eggs and milk; add to dry mixture. Stir until moistened. Stir apple mixture into batter.
  5. Spoon batter into muffin pan, filling cups ⅔ full.
  6. Bake for 12 to 14 minutes or until golden brown.
  7. Let cool in pan for 5 minutes. Gently run a knife around edges of muffins to remove.

Lemon-Zucchini Muffin Recipe

These little lemon-zucchini muffins are delicious and great with a cup of coffee.  Also a wonderful way to sneak veggies into your children’s diet. Full of lemon flavor topped with a light lemon syrup.  You will love this recipe.

Ingredients
  • 1 ¾ cups all purpose flour
  • ½ cup sugar
  • Lemon Zest of 1 lemon
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup zucchini, finely shredded
  • 2 eggs
  • ½ cup butter, unsalted,melted
  • ½ cup buttermilk
  • 1 teaspoon lemon extract
  • Lemon Syrup:
  • 3 tablespoons confectioner’s sugar
  • Juice of 1 lemon
Instructions
  1. Preheat oven to 400 degrees F.
  2. Spray miniature muffin pan with non-stick spray….this recipes makes 48 muffins.
  3. In large bowl, whisk together flour, sugar, lemon zest, baking powder, baking soda, and salt.
  4. In medium bowl, combine shredded zucchini, eggs, melted butter, buttermilk, and lemon extract. Stir until blended.
  5. Add liquid ingredients to dry ingredients. Stir only until blended.
  6. Using a teaspoon, drop batter into each muffin well.
  7. Bake 7 to 8 minutes or until muffin is slightly golden brown.
  8. Place onto wire racks.
  9. In small bowl, stir together confectioner’s sugar and fresh lemon juice.
  10. Dip tops of warm muffin into syrup.
