Frozen Chocolate Coconut Yogurt Bites

Ingredients
  • 2 cups vanilla yogurt
  • 1 cup milk
  • 4 tablespoons powdered sugar
  • 2 teaspoons coconut extract
  • ¾ cup coconut, flaked, sweetened, divided
  • 4 to 8 ounces semi sweet chocolate baking bar
  • 1 tsp. shortening
Instructions
  1. In a medium size bowl combine yogurt, milk, sugar, extract, and ½ cup of coconut. Stir.
  2. Place yogurt mixture in ice cube tray, filling each cube to top. Insert lollipop or popsicle stick in center of each cube.
  3. Freeze 4 to 6 hours.
  4. Microwave chocolate and shortening together for 1 minute. Stir until smooth.
  5. Remove frozen yogurt bites from ice tray.
  6. Working quickly, dip top part of each yogurt bite in warm chocolate and then in remaining coconut flakes.
  7. Keep frozen until ready to eat.

Chocolate Banana Pudding Pops

Ingredients
  • 1 small box of instant chocolate pudding (You can use sugar free for less calories)
  • 2 cups of milk (You can use fat free also)
  • 1 banana
  • 1 container of vanilla yogurt
  • 8 waxed paper cups (8oz)
Instructions
  1. In bowl, beat pudding and milk together with wire whisk until well blended. Let stand until thicken. About 5 minutes.
  2. In another bowl, mash banana with fork and stir in yogurt.
  3. Place waxed paper cups in 8-inch pan for easier handling. Spoon 2 tablespoons of pudding into each cup. Divide yogurt/banana mixture evenly among cups. Top with remaining pudding mixture. Insert popsicle stick into center of each pop.
  4. Freeze pudding pops about 2 hours or until solid. Store in ziplock freezer bag. Peel off paper cups before serving.
