This recipes make 2 standard loaves or 1 bundt cake…..the apples will have a little crunch to them making it so yummy…..Keep one loaf for you and bless someone else with the other…..  🙂

Ingredients
  • 2 large granny smith apples, cored, skin on and diced into small pieces
  • 3 cups all purpose flour
  • 2 cups sugar
  • 1 ½ tsp. salt
  • 1 ½ tsp. baking soda
  • 1 cup canola or vegetable oil
  • 2 eggs
  • 1 ½ tsp. vanilla
  • ½ cup raisins
Instructions
  1. Preheat oven to 325 degrees.
  2. In a large bowl mix flour, sugar, salt and baking soda.
  3. In a medium bowl whisk together oil, eggs and vanilla.
  4. Add the wet ingredients to the dry and mix by hand. Batter will be stiff…much like cookie dough.
  5. Add the apples and raisins. Mix in.
  6. Spray 2 loaf pans with cooking spray. Add batter to each pan….
  7. Cook for 1 hour or until the center comes out clean.
  8. Cool on wire rack…. Great with Vanilla Ice Cream!!!

This cake is sure to be a hit…. Super moist and super easy to make…..Great for Easter or any springtime dessert.  Made using basic lemon cake mix, lemon instant pudding and whipping cream.

Ingredients
  • 1 box lemon cake mix
  • 1 teaspoon lemon extract
  • 1 small (3.4 ounce) box instant lemon pudding
  • 1 pint heavy whipping cream, chilled
  • ½ to 1 cup powdered sugar
  • Lemon Zest (optional garnish)
Instructions
  1. Follow directions on cake box to prepare batter with the exception of adding 1 teaspoon of lemon extract to prepared batter. Bake two (8 or 9 inch) round cakes. Set prepared cakes aside to cool completely.
  2. Follow directions to prepare instant lemon pudding. Set aside.
  3. Place large mixing bowl and beaters in freezer for 30 minutes before whipping the cream. Add cream to cold bowl and beat with electric mixer on highest speed until soft peaks form. Add powdered sugar. Beat until cream holds peaks.
  4. Using a bread knife, cut cakes in half making 4 layers instead of 2.
  5. Place first layer on cake plate. Spread half of pudding on cake. Second layer, spread some whipped cream. Third layer, spread remaining lemon pudding. Place top layer on cake and cover top of cake with remaining whipped cream. Serve with remaining whipped cream on side…..
  6. Chill until ready to serve….

Italian Cheesecake

Very easy to make Italian Cheesecake.  Made using a boxed yellow cake mix and ricotta cheese.

Ingredients
  • 1 box yellow cake mix (follow directions to prepare cake)
  • 2 lbs. Ricotta cheese
  • ¾ cup sugar
  • 4 eggs
  • 1 ½ teaspoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees. Grease a 13 x 9 inch baking dish. Set aside.
  2. Follow directions for preparing cake, pour cake batter into greased baking dish.
  3. In large bowl, combine ricotta, sugar, eggs and vanilla together. Using an electric mixer beat for 3 minutes at medium speed. Pour cheese mixture over cake batter. Cut thru using a butter knife.
  4. Bake 1 hour or until toothpick comes clean in center.

Ingredients
  • 1 box lemon cake mix
  • 1 cup water
  • 1 teaspoon Lemon Extract
  • 1 (3 ounce) package lemon jello
  • ¾ cup canola oil
  • 2 eggs
  • 2 cups confectioners sugar
  • ½ cup fresh lemon juice
  • 1 tablespoon fresh lemon zest
Instructions
  1. Preheat oven to 350 degrees. Lightly grease and flour a 13x9x2 inch baking dish. Set aside.
  2. In a large bowl, combine dry cake mix, water, lemon extract, jello mix, oil and eggs. Beat with an electric mixer for 3 minutes. Spread batter in prepared pan.
  3. Bake for 30 to 35 minutes or until cake is done. While still hot prick entire cake with a fork. Mix confectioners sugar, lemon juice and zest.
  4. Pour over top of warm cake. Can be served with whipped cream.
