  • ½ cup brown sugar
  • 2 teaspoons cinnamon
  • ⅔ cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ tsp. baking powder
  • ½ cup milk
  • 2 apples, peeled and chopped
  1. Preheat oven 350 degrees. Grease and flour loaf pan. Mix brown sugar, cinnamon and chopped apples together in a bowl and set aside. Using an electric mixer beat sugar and butter together. Add eggs and vanilla extract.
  2. Combine flour and baking powder together and add to butter mixture. Add milk. Mix until batter is smooth. Pour half of batter into loaf pan. Add half the apple mixture. Pour remaining batter over apple layer and then top off with remaining apple mixture.
  3. Bake 30 to 50 minutes or until tester come out clean.
