Oatmeal Raisin Cookie Recipe

Ingredients
  • • 1 cup butter, softened
  • • 1 cup light brown sugar
  • • ¼ cup sugar
  • • 1 egg
  • • 1 tablespoon vanilla extract
  • • 2 cups all purpose flour
  • • 1 teaspoon baking soda
  • • ½ teaspoon baking powder
  • • ½ teaspoon salt
  • • 2 cups raisins
  • • 1 ¼ cup cooking oats
Instructions
  1. Preheat oven to 375 degrees F.
  2. Using an electric mixer combine butter, brown sugar, sugar, egg and vanilla together. Beat until blended.
  3. In med. bowl combine flour, baking soda, baking powder and salt together. Add to butter mixture.
  4. Fold in raisins and oats.
  5. Drop dough by tablespoons onto lightly greased baking sheet.
  6. Bake 8 to 11 minutes or until lightly browned along edges.
  7. Cool on baking sheet 2 minutes. Transfer to wire rack to cool.

Ingredients
  • 2 sticks or 1 cup of butter, unsalted, softened
  • 1 cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 cup sweetened dried cranberries
  • 1 cup raisins
  • 1 ¼ cup quick cooking oats
Instructions
  1. Preheat oven to 375 degrees F.
  2. In large bowl using electric mixer beat butter, brown sugar, sugar, egg and vanilla. Beat until smooth.
  3. In medium bowl combine flour, baking powder, salt, and baking soda together. Add to butter mixture. Mix until blended.
  4. Stir in cranberries, raisins, and oats.
  5. Spoon cookie dough by heaping teaspoons on baking sheet.
  6. Bake for 8 to 11 minutes or until lightly browned. Let stand on baking sheet for 2 minutes before transferring to wire racks to cool completely.

  • 1 ¼ cup quick cooking oats
  • 4 to 8 ounces premium white chocolate baking bar
  • 2 tablespoons shortening
Instructions
  1. Preheat oven to 375 degrees F.
  2. In large bowl using electric mixer beat butter, brown sugar, sugar, egg and vanilla. Beat until smooth.
  3. In medium bowl combine flour, baking powder, salt, and baking soda together. Add to butter mixture. Beat until blended.
  4. Stir in cranberries and oats.
  5. Spoon cookie dough by heaping teaspoons on baking sheet.
  6. Bake for 8 to 11 minutes or until lightly browned. Let stand on baking sheet for 2 minutes before transferring to wire racks to cool completely.
  7. Microwave chocolate and shortening in medium size bowl for 90 seconds or until chocolate is melted. Dip half of each cookie into chocolate. Place dipped cookies on a baking sheet lined with wax paper. Refrigerate 15 minutes or until chocolate is set.
