Italian Sausage Rigatoni

  • 1 (8 oz.) box Rigatoni noodles
  • 1 tbsp. extra virgin olive oil
  • 1 cup roasted dried tomatoes
  • ⅓ lb. Italian pork sausage (sliced)
  • 4 garlic cloves, chopped
  • ¾ cup pitted Kalamata Olives (sliced)
  • 1 (24 oz.) Jar of spaghetti sauce
  • Optional: ½ cup Mozzarella Cheese (shredded) for topping
  1. Cook pasta as directed on pkg. Drain, set aside. In large sauté pan, cover bottom of pan with olive oil. Cook sliced Italian sausage and chopped garlic over med. heat until sausage is brown. Add roasted dried tomatoes, Kalamata olives and spaghetti sauce. Cook until thoroughly heated. Add cooked pasta to sauce. Stir until pasta is coated with sauce. Top with mozzarella cheese.
