Gooey Apple-Raisin Enchiladas Recipe

  • 10 flour tortillas (fajita grande size)
  • 2 (20 ounce cans) apple pie filling
  • 3 ounces raisins
  • 1½ cups water
  • 1 cup sugar
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup butter
  • 2 tablespoons cinnamon sugar
  1. Preheat oven to 350 degrees.
  2. Combine water, sugar, cinnamon, vanilla extract, and butter in medium size sauce pan and cook until butter is melted and sugar is dissolved. Remove from heat.
  3. In a medium bowl combine pie filling and raisins together.
  4. Fill each tortilla with 2 tablespoons of pie mixture, roll up and place in 9x13 baking dish.
  5. Evenly pour sugar mixture over the top of tortillas. Sprinkle with cinnamon sugar.
  6. Cover and bake for 35 minutes. Remove cover and bake another 5 to 10 minutes.
  7. Let cool for 30 minutes before serving.
