Coconut Pound Cake

Serves: 10 - 12
  • 4 sticks of butter
  • 2 cups of sugar
  • 2 cups of all-purpose flour
  • 6 eggs
  • 1 (7 oz.) can of coconut
  • 1 teaspoon vanilla flavoring
  • 2 tablespoons of whole milk
  • ½ - 1 cup powdered sugar
  • ½ teaspoon coconut extract
  1. Preheat oven to 350 degrees.
  2. Grease and flour bundt pan.
  3. Cream butter and 2 cups of sugar until blended. Add eggs one at a time and mix. Add 2 cups of flour and mix well. Add vanilla flavoring.
  4. Pour into bundt pan and cook for 1 hour or until knife come out clean.
  5. To make glaze: Whisk together milk, powdered sugar and coconut extract. (Add powdered sugar is glaze is too thin or add milk if too thick.)
  6. Drizzle with glaze while cake is still warm.
