Homemade Brushchetta easy to make

Your family will love this Bruschetta recipe.  Very easy to make and only takes a few minutes to prepare.  Impress your love ones with this dish..Taste very similar to Olive Garden’s Bruschetta.  YUM!

Ingredients
  • 2 cups of fresh tomatoes, chopped
  • 3 tablespoons fresh basil, finely chopped
  • 3 cloves of garlic, minced, divided
  • 1 small white or red onion, finely chopped
  • 2 teaspoons balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 loaf of Italian Bread, sliced
  • ⅓ cup parmesan cheese, grated
  • ¼ cup extra virgin olive oil
Instructions
  1. In a medium size bowl, toss together, tomatoes, basil, 2 cloves of minced garlic, onions, balsamic vinegar, salt and pepper.
  2. Refrigerate for a least 1 hour.
  3. When ready to serve…..preheat oven to 450 degrees.
  4. Place sliced bread on large baking sheet. Drizzle each slice with olive oil, remaining minced garlic…..then sprinkle some parmesan cheese on top
  5. Bake for 5 minutes or until bread starts to crisp.

What to do with all that Zucchini you keep getting from your garden.. Well this is a great recipe and so easy to make….I also like to use frozen corn instead of the can corn.  Gives these fritters and extra burst of freshness.  You may want to consider making an extra batch of these beauties…. #2 easytomakecornfrittes

Ingredients
  • 2 cups fresh Zucchini, shredded
  • 2 tablespoons butter
  • 1 small white onion, finely chopped
  • 1 clove of garlic, minced
  • 1 cup of frozen whole kernel corn
  • ½ cup of yellow cornmeal
  • ½ cup of all purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¾ cup of buttermilk
  • 1 egg
Instructions
  1. Place shredded zucchini in large bowl and set aside.
  2. In small saucepan melt butter and cook onions, garlic, and corn for 3 to 4 minutes. Add to zucchini. Stir to combine.
  3. Stir in the rest of the ingredients.
  4. In large frying pan, cover bottom with canola oil. Heat on medium heat.
  5. Using an ice cream scooper, drop fritter mixture into pan, gently pressing down with a spatula.
  6. Cook until golden brown on each side.
  7. Place on paper towel to drain excess grease off.

Ingredients
  • 2¼ cups grated zucchini
  • 1 teaspoon salt
  • ½ cup grated Parmesan cheese
  • ½ cup all-purpose flour
  • 1 large egg
  • 1 small white onion, minced
  • 1 tablespoon parsley
  • ½ teaspoon pepper
  • ½ cup canola oil (for cooking)
Instructions
  1. Combine zucchini and salt together in a colander or sieve. Let drain for 15 minutes. Make sure to squeeze out any excess liquid.
  2. In a medium bowl, combine zucchini, cheese, flour, egg, onion, parsley and pepper. Stir well.
  3. In a large skillet, heat canola oil over medium heat. Using a levered ice cream scoop, spoon batter into hot oil. Press latkes with a spatula. Fry until golden brown. Drain on paper towels.

Zucchini Bake Recipe

Ingredients
  • ½ stick butter, melted
  • 3 medium sized zucchini, cut into slices
  • 3 eggs
  • ½ cup milk
  • 4 tablespoons Italian Bread Crumbs
  • ⅓ cup onion chopped
  • 1 teaspoon Worcestershire sauce
  • ¾ teaspoon salt
  • Dash of hot sauce
  • 1 cup grated Parmesan cheese, divided
Instructions
  1. Preheat oven to 350 degrees. Butter a 1 ½ quart casserole baking dish.
  2. In large saucepan combine melted butter and zucchini. Cover and cook over low heat about 7 minutes, stirring occasionally. Remove from heat and set aside.
  3. In medium size bowl beat eggs and milk. Add breadcrumbs, onion, Worcestershire sauce, salt, hot sauce and ½ cup of Parmesan cheese. Mix well. Add zucchini mixture, stirring until well blended. Spoon mixture into prepared casserole dish. Sprinkle with remaining Parmesan cheese.
  4. Bake uncovered 30 to 35 minutes.
