I have been making this for years.  Salad with layers of veggies, bacon and cheese.  Can’t beat this!


Classic Seven Layer Salad with Bacon

Ingredients
  • 1 (10 ounce) package frozen peas, thawed
  • 1 cup green bell peppers, chopped
  • 2 stalks celery, thinly sliced
  • 1 cup cheddar cheese, shredded
  • 1 cup mayonnaise
  • 2 green onions, sliced
  • 1 package Bacon, cooked and crumbled
  • 1 package lettuce, shredded
Instructions
  1. In large glass bowl layer as ingredients are given. Starting with peas on the bottom of bowl.
  2. Refrigerate for 2 to 10 hours for best result.

 Creamy, crunchy, all time summer favorite…. Cucumber Dill Salad.  This will cool you off on any hot summer day….

Crunchy Cucumber Dill Salad

Ingredients
  • 3 cups of thinly sliced cucumbers
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • ½ cup of sour cream
  • 1 tablespoon of white vinegar
  • 2 tablespoons of fresh chopped dill
  • pepper to taste
Instructions
  1. Toss sliced cucumbers with salt & let set for 1 hour. Then gently press out the moisture from the cucumbers with a paper towel.
  2. In small bowl, combine sour cream, vinegar, dill and pepper.
  3. Coat cucumbers with sour cream mixture.
  4. Note: Best if serve cold..

Ingredients
  • 1 cup shredded carrots
  • 1 red pepper, chopped
  • 1 package frozen broccoli florets, steamed
  • 1 pint cherry tomatoes, halved
  • 1 (2.25-ounce) black olives, sliced, drained
  • 1 (16-ounce) package ziti pasta noodles, cooked
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon lemon zest
  • ½ cup extra virgin olive oil
  • 2 tablespoons spicy brown mustard
  • 2 leaves of fresh basil, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ cup parmesan cheese, grated
  • ½ cup romano cheese, grated
Instructions
  1. In large bowl, combine carrots, red bell pepper, broccoli, tomatoes, olives and ziti noodles.
  2. In a medium bowl, stir together lemon juice, lemon zest, oil, mustard, basil, oregano, parsley, salt, pepper, parmesan cheese and romano cheese. Pour liquid over pasta mixture. Toss to coat.
