Mama Chicken Pot pie

Great one meal dish for a cold chilly night….  And this Chicken Pot Pie is the BEST!  All made with fresh cooked chicken breasts, carrots, celery and onions.  If desired, omit 1/4 cup of chicken broth for thicker sauce.

Ingredients
  • 1 box refrigerated pie crusts (2 crust box)
  • 2 chicken breasts
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • ½ cup white onion, diced
  • 2 (10 ½ ounce) cans cream of chicken
  • ¼ fresh chicken broth
  • Pinch of salt and pepper

Instructions
  1. In large stock pot, place chicken, carrots, celery and onions, cover with water. Boil on med high until chicken is cooked. Remove chicken from pot and set aside to cool. Once cooled, pull chicken apart into smaller pieces. Continue to cook vegetables until desired tenderness. Retain at least ¼ cup of chicken broth from pot.
  2. In large bowl combine cooked chicken pieces, carrots, celery and onions. Add ¼ cup chicken broth and cream of chicken. Stir until combined. Salt and pepper .
  3. In 9 inch deep dish pie plate, cover bottom and sides with crust. Pour chicken mixture into pie crust.
  4. Cover with top crust, pinching the sides together.
  5. Preheat oven to 350 degrees. Bake for 30 minutes or until crust is golden brown.

A new twist on just plain Mac and Cheese.  I love sausage and this makes a great combination with the pasta,  cheese and garlic.  Let’s not forget the breadcrumbs.  YUM!

Ingredients
  • 12 ounces or 4 cups of medium macaroni shells, cooked
  • 2 tablespoons butter
  • 2 cloves garlic, finely chopped
  • ¼ cup all purpose flour
  • 2 ½ cups milk
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 2½ cups shredded cheddar cheese
  • TOPPING:
  • ½ pound regular ground sausage, cooked, crumbled
  • ½ pound hot ground sausage, cooked, crumbled
  • 6 slices of bread, toasted and broken into crumbs
  • ½ cup shredded cheese

Instructions
  1. Preheat oven to 350 degrees.
  2. In a large saucepan, melt butter, add garlic and simmer for 2 minutes.
  3. Stir in flour and milk. Stir until thick and smooth.
  4. Add pepper and salt. Stir in 2 ½ cups of cheese. Stir until cheese is melted.
  5. Pour pasta shells into 13 x 9 baking dish. Pour cheese mixture over shells and stir until coated.
  6. Sprinkle ½ cup of shredded cheese over top of shells.
  7. In medium bowl, combine both sausages and bread crumbs. Sprinkle over macaroni.
  8. Bake for 15 minutes or until cheese is melted.

Ingredients
  • 2 Salmon Steaks
  • 1 ounce panko bread crumbs
  • ½ teaspoon parsley, chopped
  • ½ teaspoon fresh ground horseradish
  • ½ ounce Asiago cheese, grated
  • 1 ounce extra virgin olive oil
  • Salt and pepper

Instructions
  1. Preheat oven to 350 degrees. In medium size bowl combine bread crumbs, parsley horseradish, cheese and olive oil. Stir until combined.
  2. Salt and pepper salmon. Press bread crumb mixture on top side of salmon and place on a non-stick baking sheet.
  3. Bake 5 to 8 minutes or until desired doneness.

Ingredients
  • 1 lb. Italian Sausage
  • 2 tablespoon butter
  • 3 cloves garlic, minced
  • 1 small white onion, chopped
  • 2 (2.25 ounce) cans black olives, sliced, drained
  • 2 (23.25 ounce) jars spaghetti sauce
  • 2 large eggs
  • 1 (14.5 ounce) can petite diced tomatoes, drained
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 ½ teaspoon Italian Seasoning
  • 1 lb. Rotini pasta, cooked
  • 1 lb. mozzarella, grated, divided

Instructions
  1. Preheat oven to 350 degrees. Lightly grease 9×13 baking dish.
  2. Remove casing from sausage. Place in large saucepan and cook until well done. You want the sausage to be crumbled.
  3. Remove from heat and set sausage aside.
  4. Melt butter in a medium pan over medium heat. Add garlic and onion. Cook for 10 minutes. Stir in olives. Add to sausage.
  5. In a large bowl, whisk together spaghetti sauce, and eggs. Stir in diced tomatoes, salt, basil, oregano, and Italian seasoning.
  6. Layer half of pasta, half of sausage mixture, half of sauce mixture, and half of cheese into prepared baking dish. Repeat layers, ending with cheese.
  7. Bake for 30 minutes or until hot and bubbly.
